Take back the tap

Water words: The City of San Francisco, the San Francisco Public Utilities Commission and the nonprofit Food and Water Watch are launching the restaurant-based “Take Back the Tap” campaign at noon Thursday in front of the Ferry Building.
The campaign is designed to encourage restaurants to forgo serving bottled water and instead use tap water, with a goal of protecting the environment and reducing greenhouse gases, says Tony Winnicker, PUC director of communications. Every restaurant in the city – more than 3,000, Winnicker says – will receive a how-to guide to help them convert to tap.

“So many restaurants are using sustainable products. The next step is to use sustainable water,” Winnicker says, pointing out that the city’s water was cited as the cleanest of 20 municipal water supplies tested for possible contaminants (see the links with this story at sfgate.com/food). He also notes the city’s water is brought from Hetch Hetchy by gravity and creates clean energy along the way.

Because the water campaign consortium is focusing on restaurants to educate consumers, any consumer who happens to wander over to the Ferry Building event tomorrow will score a free stainless steel water bottle, courtesy of the water campaign consortium.
