Hank Shaw has his Sacramento garage, I have a dehydrator in my back porch.
Drying the zucchini was so worth it, if only to reduce drastically the space they take up in the fridge. But I like how the shriveled little things taste. The flavor of zucchini is often described as “nutty,” and these fit the bill much more than most of the preparations I’ve had.
As Mr. Shaw did, I plan to make a pasta dish with these, probably with tomatoes from my garden. I will certainly add basil that I brought home from Veggielution almost a week ago (and which is cheerfully flowering, even stuck in a jam jar)
and maybe, as he also suggests, some mint.
I also picked what was left of my own apricots this morning, and tomorrow we’re going back to the Los Gatos orchard to finish off what wasn’t ready last Saturday. I may be able to make you a batch of jam yet, Karen.

So glad you liked the dried zucchini! Definitely try them with mint and garlic and chiles first, then move on to the basil — I find basil to be less of a match with zukes than mint or parsley.
